Classic Pizza Dough Recipe


After trying a number of pizza dough recipes and learning a fair amount about dough, I finally found a go to classic. Introducing the Classic Pizza Dough Recipe from Ooni!

You will need a couple of basic kitchen tools to get it done.


Kitchen Aid or Strong Hands
Mixing Bowls
Proofing Basket
Measuring Cups
Kitchen Scale

Pizza Dough Ingredients:

  • 500g (4 Cups) Type ‘OO’ Flour “Strong White”
  • 300g (300ml / 10.5 oz / 1 1/3 Cups) Warm Water
  • 20g (1tbsp) Olive Oil
  • 10g (2tsp) Salt
  • 7g Dry Yeast or 20g Fresh Yeast



Fill bowl or measuring cup with warm water. You want the water no warmer then 96 Degree Fahrenheit. To hot and the yeast will die. To cold and the yeast won’t activate. I use a thermometer to test the temperature of the water.

Whisk in yeast and olive oil into the warm water.

In a separate bowl, sift the flour with the salt.

Using a Mixer: When using a mixer make sure to leave it on a lower setting; for example on my kitchen aid I place the machine on 2/6 and begin to gradually mix in the water with the flour and salt mixture. I also use a dough hook and a spatula to make sure the flour and liquids mix just right.

Place in Proving Basket, cover with towel, and place in a warm area to prove for 1-2 Hours.

Once the pizza dough has proved its time to divide into 5 – 165g pizza dough balls. This size seems to be the perfect size for traditional Neapolitan pizza bases for use in the Ooni pizza oven. Let these newly formed pizza bases prove for another 20 minutes or so and your ready to make perfect pizzas.
